Perhaps chickpea flour or fresh blended chickpeas could be added to provide additional protein? Especially if you want to avoid processed protein powders.
You would have to adjust the amounts of brown rice syrup and barley malt as Chickpeas do contain a decent amount of carbs as well.

No, we do not have a higher protein version of the gel at this time. Maybe I will experiment with the recipe by adding a protein powder, as I feel a higher protein gel would be beneficial.

I have made the gel with almond butter, but personally feel like the gel tastes better with peanut butter. However, almond or sunflower butter would be a better choice nutritionally speaking. You can simply substitute any nut butter for the peanut, using the same ratio.

I have also been adding a bit more water to thin the gel out, like 1/3 cup, which is especially good in cooler weather.

The gel will also spoil with time due to the water, so store in the fridge. Or, make the gel without water and add water when you are ready to use it.

Have you tried any other nut butters like almond or sunflower? If so, did you have to adapt the recipe? Thank you for developing this recipe. I have wanted to make my own gels for a long time.

Pamm, maltodextrin is cheap and pretty easy to find. It's a slow digesting complex carbohydrate derived from corn. Also, it's tasteless and easy to mix w/ other ingredients like molasses or honey.

What substitute can you use if you are allergic to brown rice syrup?

I am tired of reading on every protien bar and snack that has brown rice in it. I would like to make my own. Honey I am not allergic to but my son is. so Honey is out too.

Whole Foods Market sells both syrups, or any natural foods store should have them. Let me know what you think of the gel! Kari
